Our Distillation Methods

 We Let The Whisky Find Its Rhythm — Just As The Sea Has Found The Shore For Thousands Of Years

Every drop of our whisky is shaped by time, tradition, and the island we call home. From hand-turned barley on the malting floors to long, sea-air maturation in oak casks, our process follows time-honoured methods refined over generations

 

Each stage is carried out with patience and precision, allowing Islay’s peat, water, and maritime climate to leave an unmistakable imprint on the spirit  

The Malting Floors

Our process begins on the malting floors, where carefully selected Scottish barley is steeped in water and spread by hand.

 

As the grain begins to germinate, natural enzymes are activated, unlocking the sugars essential for fermentation.

 

Turned regularly and monitored closely, the barley is malted slowly to preserve flavour and character before drying begins.

Our Peat Kilns

The green malt is dried over smouldering Islay peat, cut from the island’s ancient bogs.

 

Rich in moss, heather, and coastal vegetation, this peat smoke imparts the distinctive earthy, smoky character for which Islay whiskies are renowned.

 

The level of peat smoke is carefully controlled, allowing balance, depth, and complexity to develop.

The Mash & Fermentation

Once dried, the malted barley is milled into grist and mixed with hot water in the mash tun. This extracts a sugary liquid known as wort.

 

The wort is then cooled and transferred to washbacks, where yeast is added and fermentation begins.

 

Over several days, the sugars are transformed into alcohol, creating a beer-like wash rich in fruity and smoky notes.

The Distillation Stage

Distillation takes place in traditional copper pot stills, where shape, size, and time are crucial.

 

The wash is distilled twice, separating the spirit into foreshots, heart, and feints. Our distillers carefully cut between foreshots (undesirable), hearts (the desired spirit), and feints (less desirable), shaping the whisky’s character. 

 

Only the heart of the run is selected—clean, complex, and full of Islay character—forming the foundation of our single malt.

The Maturation & Bottling Stage

The new make spirit is filled into oak casks and left to mature by the sea.

 

Over years of quiet ageing, the whisky absorbs flavour from the wood and the island’s maritime climate.

 

Atlantic air, salt-laden breezes, and time itself shape the final spirit, softening the smoke and revealing layers of depth, balance, and elegance.

 

And, finally, the spirit is diluted with purified water (from 60% cask strength to a minimum of 40% alcohol by volume) and bottled with our distinctive branding.
