Our brewing process involves a series of meticulous steps that emphasise quality, tradition, and creativity.
Craft ales are produced through a multi-step fermentation process involving malted barley, hops, water, and yeast. The process includes malting (soaking and germinating barley to create malt), mashing (mixing malt with hot water to convert starches to sugars), boiling (sterilising the wort and adding hops for flavour), fermentation (adding yeast to transform sugars into alcohol), conditioning (developing flavours), and packaging (filtering and bottling the finished ale).
Craft ciders are produced by fermenting apple/fruit juice with yeast, a process akin to ale brewing but focused on fruit. The key steps include: harvesting and pressing fresh apples/fruits to extract juice; fermenting the juice with yeast to convert sugars into alcohol; possible secondary fermentation for enhanced flavour and carbonation; filtering to clarify the cider; carbonation for effervescence; and finally, bottling the cider for distribution.
